Growing up, my Twin Foodie and I ate peanut butter or cheese on everything. Sometimes both at the same time. We also squeezed, and I mean generously squeezed, Ranch dressing on every dinner known to mankind. I don’t know how my mother endured us. Now that Twin Foodie and I are past the teen years (I won’t say how far past), we no longer top everything with Ranch dressing. You have to grow up sometime, right?
Today peanut butter and cheese still have their dominant, proper place, but Ranch has been replaced by bacon and dark chocolate. Sometimes both at the same time. Bacon makes anything savory 1,000 times better, but don’t dismiss bacon on your sweet foods such as bacon maple ice cream or a bacon maple donut. Dark chocolate is a great addition to anything sweet, but can also make an appearance in savory foods such as chili or mole sauce.
Dark chocolate is full of antioxidants, so it basically qualifies as a health food. So there you have it – chocolate is in the same category as peas. My kids don’t need to know I said that. There’s also the line of thought that chocolate is good for your soul. Are there any bad days that dark chocolate can’t make better? Don’t answer that question. I’d like to continue living in my world of chocolate happiness. Pair it with some peanut butter and you have a snack fit for champions.
If you will be outside getting your dose of Vitamin D for the day, leave the dark chocolate out of your energy bites unless you just love licking melty chocolate off your fingers. If your day does not include being in the roasty toasty sun, definitely add dark chocolate to these.
Twin Foodie Review: These are my new favorite camping/sports/outdoor energy bite! I loved them! I left coconut off of half because some of my kids aren’t crazy about coconut, but I wanted coconut of course! Chocolate is a delicious addition.
