Happy New Year! Have you made any New Year’s resolutions? If they fall into the category of eating healthy, delicious food, you are in the right place. A couple of times a year I cut out all refined sugar, white flour and dairy and focus on eating lots of fruits, vegetables, and whole grains. Not only do I start to feel amazing, but my taste buds reset to crave healthy foods instead of so many sweets and treats.
Don’t get me wrong. I’m the last person who would advocate a sugar free holiday season. Christmas is a time for homemade candy, Holiday Spiced Tea, and Dark Chocolate Bar Hot Chocolate. New Year’s Eve is a time for eggnog, chocolate fountains and Jumbo Chocolate Cookies.
However, when January rolls around and the Christmas decorations have been put away and the parties are over, it’s time to push through the rest of our rainy, cold winter here in the Northwest. When the skies are gray and the ground is soggy, I have to give myself every advantage to feel good, have energy, and stay healthy.
So this January on Alfresco Foodie, look for simple recipes that are healthy and tasty. Chocolate Peanut Butter Banana Smoothie makes the transition away from refined sugar easier. With plenty of sweetness from the banana, it will satisfy your sweet tooth. The added cocoa, cinnamon and peanut butter give you a flavor combination that can’t be beat.
Banana: Use a banana that is ripe, but not too ripe unless you like a strong banana flavor.
Almond Coconut Milk: I use a blend made by Silk, but there are other brands such as Almond Breeze. If you can’t find a blend, plain almond milk works just as well. Just be sure to get the unsweetened variety.
Peanut Butter: Check the ingredient list to make sure there is no added sugar. Even some “natural” peanut butter has sugar. (I’m looking at you, Jif and Skippy.) You want the ingredients to be peanuts and salt. End of story.
