Riced broccoli and cauliflower are all the rage in the Northwest. Maybe they are everywhere. You can buy bags of it in the produce section at Trader Joe’s and Whole Foods. People who are eating a grain free diet or want to reduce the amount of carbs they eat can use this in the place of rice or pasta. I eat riced veggies because the flavor and texture are different and surprising. When you eat Broccoli Quinoa Salad with Lemon, Almonds and Feta, you add raw broccoli to your diet in a different way.
Broccoli: I prefer to NOT buy the pre-chopped bag of broccoli florets. It usually takes me longer to trim off bad spots and brown stems than to buy a whole head of fresh broccoli and quickly chop it small enough to put in the food processor. Pulse on low until the broccoli is in small pieces, but not quite as small as grains of rice. If you don’t have a food processor, you can chop the broccoli until it is in tiny pieces.
Broccoli Quinoa Salad with Lemon, Almonds and Feta tastes delicious and is packed full of superfoods. This recipe has:
- raw broccoli (hello, antioxidants, fiber and vitamins)
- raw almonds (hello, omega 3, fiber and minerals)
- cooked quinoa (hello, protein, fiber, amino acids, vitamins and minerals)
You will feel great after packing some nutrients into your day. Freshly squeezed lemon juice adds a bright, zippy flavor that screams fresh. Green onions add a nice crunch. The feta cheese adds a little creaminess and tang, but it is easy to leave off if you eat a dairy free or vegan diet. Eat this as a main dish for lunch or a side salad for dinner.

The riced broccoli craze hasn’t hit my neck of the woods yet, so when I was mixing all of the ingredients, the first taste was like solving a mystery.
